Founded by Christos Koulouriotis DipWSET, The Knack Project is a deeply personal exploration of place, driven by a passion for minimal intervention and the natural wine movement. Working with family-owned vineyards around his hometown of Megara - the majority of which are old vines - Christos crafts wines in tiny quantities, each one shaped to express both the character of the grape and the terroir of the Geraneia Mountains.
Rawlith is a characterful, small-batch Assyrtiko made from young vines, with just 1,163 bottles produced - a wild, expressive take on the variety. After a few days of skin contact, it ferments with indigenous yeasts and is then aged for 18 months on its lees in a combination of large French oak and concrete egg, building both texture and depth.
Golden in colour, the wine opens with lifted aromas of lemon blossom, citrus, quince, and peach, layered with subtle notes of flint, honey, hazelnut, and vanilla. On the palate, it is full-bodied yet precise, with zesty acidity cutting through a rich, textured core of ripe fruit. Hints of toast add further complexity, leading to a long, layered finish.
