Founded by Christos Koulouriotis DipWSET, The Knack Project is a deeply personal exploration of place, driven by a passion for minimal intervention and the natural wine movement. Working with family-owned vineyards around his hometown of Megara - the majority of which are old vines - Christos crafts wines in tiny quantities, each one shaped to express both the character of the grape and the terroir of the Geraneia Mountains.

From 40-year-old vines at 630 metres above sea level in Megara, the Knack Project Mouchtaro reflects a philosophy rooted firmly in the vineyard - where each vintage is shaped by nature and no two years are ever the same. Fermented with wild yeasts, unfiltered, and made with minimal sulphites, it is a pure, unpolished expression of place.

Aged for 23 months in French oak to soften Mouchtaro's naturally high tannins, the wine gains depth and structure without losing its energy. Only 1,350 bottles were produced, making it a rare find.

The nose is rich and inviting, layered with red and black fruits - wild strawberry, cherry, sour cherry and blackberry - wrapped in a subtle touch of chocolate. On the palate, bold tannins are balanced by fresh acidity and vibrant fruit, creating a natural wine that is both powerful and beautifully composed.

Guided by a low-intervention philosophy and a growing commitment to biodynamic practices (introduced in 2023), the approach in both vineyard and cellar is deliberate and restrained. Fermentations are spontaneous with indigenous yeasts, and the wines are left unfined, unfiltered, and unstabilised, with only minimal sulphur added. The result is a collection of honest, unpolished wines that speak clearly of their origin - vibrant, textural, and alive.
